Winemaking for Japanese Cuisine

Leading wine critic Robert Parker of The Wine Advocate described Shizen as the “sushi wine” that perfectly highlights and enhances the food without overpowering it.  

Japanese cuisine features the use of simple ingredients and more fish than Western cuisine. In order to make a white wine perfectly suited to these characteristics, Shizen’s winemaker created a refreshing wine with low alcohol and a strong backbone of acidity.
