In order to make an internationally recognized wine, we invited Professor Denis Dubourdieu to consult for Shizen Wines. He is considered to be one of the leading specialists in grape growing and the production of white wines. He abilities to utilize science in winemaking was an important component for us to find the right grape and right method to produce a wine to represent Japan.
Professor Denis Dubourdieu educated us that vitis vinifera is the only species of grapes that contain unique flavor profiles that are suitable to make internationally accepted wines. In 2003, we researched Japanese grapes and University of California Davis (Department of Viticulture and Oenology) confirmed that Koshu is vitis vinifera and is indigenous to Japan.
